Rhubarb cake

Rabarbara je trajnica, bogata z antioksidanti ter zaradi vsebnosti kalcija, kalija in magnezija prava zakladnica zdravja. V kulinariki se uporabljajo le olupljena stebla, ki se jih trga spomladi in ponovno jeseni. Za pripravo rabarbarinega peciva potrebujemo zelo malo časa, okus pa je nepozaben!

Rhubarb is a perennial plant; it is very healthy as it is rich in antioxidants and contains calcium, potassium and magnesium. Only the peeled stems are used for cooking, which can be harvested in spring or autumn. A rhubarb cake, which is usually prepared by following a simple and quick recipe, has an unforgettable taste!

Ingredients to serve four:

  • • 5 egg whites
  • • 5 large tablespoons brown sugar
  • • 5 egg yolks
  • • 5 tablespoons sharp or wholegrain flour
  • • 150 grams rhubarb stems
  • • brown sugar

Beat the egg whites into firm peaks, add 5 tablespoons of sugar and, while stirring, also the yolks. Combine well. Carefully sift in the flour and mix by using a wooden spoon, so that the mass remains light and fluffy. Pour the mixture into a baking tray lined with baking paper. Place peeled and chopped rhubarb stalks over the dough. Sprinkle with some sugar. Place in oven and bake for 15 minutes at 180 °C.

Cool the cake, cut into rectangles and serve.
